Early spring is when the process of “tapping the tree” occurs. The sap only flows when the temperatures rise into the 40’s during the day and cool off into the 20’s at night. This is a labor-intensive process that requires drilling a tiny hole into each tree, and then tapping a spout ever so gently into that hole. Tapping a tree doesn’t cause any damage when done properly. Trees can be tapped for over 100 years and will still thrive. It requires massive precision, if the tree is tapped too early the hole will eventually dry out and stop running prematurely; too late and the farmers have shortened an already short season and diminished their supply of sap. 2 Large Eggs

1 Cup Milk

¾ Cup Whole Milk Kefir

1 Tb. Raw Honey

½ tsp. Cinnamon

¼ tsp. Baking Soda

1 Cup Almond Meal

1 ¾ Cup Gluten Free Buckwheat Flour

2 tsp. Baking Powder

1/8 tsp. Sea Salt

3c. Pure Maple Syrup (Grade B)
