Rosemary Mint Lamb Chop Recipe

This is one of my favorite recipes when I’m having company or when I just want an elegant meal. It looks beautiful when it’s done and the flavor is amazing.

It’s like having a restaurant meal at home…AND it’s healthy and low in calories! 🙂

Note: While you can make this with leg of lamb, but I prefer the lamb chops or a rack of lamb because it’s more appealing to the eye.

Rosemary Mint Lamb Chop Recipe

Marinade Ingredients:

  • 1 cup dry red wine
  • 3/4 cup soy sauce
  • 2 tbsp extra virgin olive oil
  • 4 large garlic cloves (crushed)
  • 1/2 cup chopped mint leaves
  • 2 tbsp slightly bruised fresh rosemary
  • 1 tbsp coarsely ground pepper
  • 12 lamb chops or 4-5 lbs lamb (leg of lamb, rack of lamb, etc…)

 

Directions

Marinate the lamb in a covered bowl in the refrigerator for 12-24 hours.

For lamb chops, broil on high for approximately 7 minutes per side until lamb reaches 135 degrees for rare; 160 medium; 165 well done. If you use leg of lamb or rack of lamb, bake at 400 degrees for 25-35 minutes until desired doneness is reached.  

I like to have my lamb with a side of quinoa and use the marinade sauce at the bottom of the pan to baste over the lamb and quinoa on the plate, and garnish chops with a mint leaf or two. My other favorite side with lamb is grilled zucchini and/or yellow squash.

Cut the zucchini and/or squash in half and then slice it long ways, leaving the “skin” on. Season it with a little salt and pepper and throw it on the grill for about 3-4 minutes per side. YUMMY!!! 🙂

Total calories for 4 oz lamb (or 2 lamb chops), 1/2 cup prepared quinoa, and 1 cup grilled zucchini/ squash is 430 calories… Yes that is for the WHOLE MEAL!  And honestly…I almost can’t eat it all. Healthy can taste AMAZING! 🙂
