Your Kids Will Love This Spring Break Activity!
Modernmom’s very own Dani put her cooking skills to the test with this super-fun Nintendo “America’s Test Kitchen: Let’s Get Cooking”. game. The following morning, she humbly admitted that her tomato tart appetizer was “delicious.” The office then got buzzing about this contraption — thinking it might be a fabulously fun thing to do with the kids when they are off for (sigh) two weeks of spring break. Here’s the step-by-step recipe:
What you need: Crust
1 large egg, 1 ounce Parmesan Cheese and 1 (9-by-9 1/2-inch) sheet frozen puff pastry, thawed.
What you need: Topping
4 ounces low-moisture mozzarella, 2 medium plum tomatoes, 1 garlic clove, 1/2 teaspoon salt and 2 tablespoons extra virgin olive oil.
Beat the egg
With a fork, beat the egg in a small bowl
Prepare cheeses
Grate the Parmesan on a rasp grater. You should have 1/2 cup of cheese. Grate the mozzarella on a box grater.
Prepare tomatoes
Cut the tomatoes crosswise into 1/2 inch slices.
Prepare the garlic
Peel the garlic clove. Mince it with a garlic press (or finely chop it).
Time to heat
Preheat the oven to 425 degrees
Prepare the crust
Lay the pastry in the center of a baking sheet lined with wax paper. Brush the beaten egg onto the pastry. Fold the edges of the pastry over by 1/2 inch. Brush folded edges with egg. Using a knife, cut through the folded edges and corners of the tart shell. Sprinkle the Parmesan evenly over the crust. Poke the crust uniformly with a fork.
Bake
Bake until golden brown, about 15-20 minutes. Cool on a wire rack.
Assemble the tart
While the crust is in the oven, spread the tomatoes over layered paper towels. Sprinkle with 1/2 tsp. of salt and drain for 30 minutes.
Cheese Please
Sprinkle the mozzarella over the cooled crust. Press excess moisture from the tomatoes. Lay tomatoes on top of the mozzarella.
Flavor
Whisk 2 tbsp. olive oil and the garlic clove together and drizzle over the tomatoes on the tart.
Bake
Bake until the shell is deep golden brown.
Final touches
Cool on a wire rack for about 5 minutes and then sprinkle with 2 tbsp. of basil. Slice and enjoy! (Don’t forget to tell your guests that you slaved all day…)
MM Tip:
One great part about this recipe? During the down time, I did all the dishes. When the tart came out the the oven, the only thing left to do was sit and enjoy. LOVE IT!
