Scrumptious Southwest Salad Recipe
Looking for a zesty lunch idea? Look no further!
ModernMom’s very own Lisa Rosenblatt shared a delicious and fresh salad that’s not only beautiful to look at, it’s super easy to make!
It’s perfect for a healthy taco night substitute or as a big potluck side dish.
You’ll Need:
- 1 head of lettuce chopped
- 1 can of black beans, rinsed and drained
- 2 to 3 chopped tomatoes
- 3 to 4 chopped green onions
- ½ can of corn, rinsed and drained
- 3 tbsp shredded cheese
- Chopped cilantro
- Crushed tortilla chips
- ¼ cup olive oil
- ¼ cup vinegar
- ½ barbecue sauce
- Garlic, salt and pepper to taste
(All the ingredients)
Directions
Start with a bowl of chopped lettuce.
Around the circumference, create a circle of black beans. Immediately along the edge of that , arrange the diced tomatoes. The third layer is green onion. The next layer is corn.
In the center, you’ll put shredded cheese. Top the cheese with a pinch of chopped cilantro.
Crush up some tortilla chips to garnish the top.
For a great dressing mix up olive oil, vinegar, barbecue sauce, garlic, salt, and pepper.
Drizzle the dressing over the top, and toss the salad to serve.
If you want to, you can add a layer of barbecue chicken or beef for more protein. Personalize this salad with your favorite southwestern ingredients, and ENJOY!
