Recipes to Keep You Glowing and Growing

by Lolita Carrico

"Goddess archetypes live within every woman," says Hailey D.D. Klein, author of "For Goddess' Sake: Get the Girls Together and Have Some Fun" (Conari Press). In her book, Klein helps women access these goddesses and let them shine-all by spending time with other women.

Invite your gal-pals over for a "goddess party" this summer and have some fun with these recipes to feed body, mind and spirit:

Aphrodite
Aphrodite is all about love's abandon and delicious sensuality, and let's face it: she's a vixen. She is the all-encompassing love goddess and is not to be trifled with; she revels in her beauty.

Glorious Goddess Scrub:
8 cups (approximate) large-or small-grained sea salt or kosher salt
2 cups sunflower oil, walnut oil, avocado oil, jojoba oil or rosehip oil
½ cup aloe vera gel
1 cup dried roses, calendula flowers or lavender flowers
1 to 2 drops essential oils

In a large bowl combine sea salt with any combination of oils until the salt is covered. Stir with a wooden spoon. Add aloe vera gel and mix. Add 1 or 2 drops of essential oils of your choice, and stir again. Dried roses, calendula flowers, or lavender flowers can be added. Spoon into jars. Makes enough for about 4 medium-sized jars.

Artemis
Artemis is the adolescent huntress-strong and bold and independent. She is a nurturer of living things and creates as well as destroys; she helps us discover our own strength.

Artemis Feta Cheese Spread:
¼ cup finely chopped fresh mint
2 or 3 garlic cloves
4 Tablespoons extra-virgin olive oil
½ Tablespoon fresh ground pepper
8 oz. feta cheese, rinsed, drained and crumbled
1 to 2 tablespoons fresh lemon juice, strained

Puree mint, garlic, oil and pepper in a food processor until mixture is like a past. Add feta cheese and pulse until mixture is smooth and creamy. Adjust seasoning with lemon juice and oil, if needed. Serve with toasted pita or vegetables.

Athena
Athena is the patron of heroes, a protector and a diplomat. Her strength comes from her wisdom and faith; she is a rational rather than emotional thinker.

Sweet Potato Pancakes (Earthy and Delicious):
1 large sweet potato, peeled
1 small white onion
1 egg, lightly beaten
3 tablespoons flour
1/8 teaspoon nutmeg
¼ cup cranberry relish

In a food processor, shred the sweet potato and onion. Squeeze out any moisture. Transfer to a large bowl and combine with egg, flour, and nutmeg. Heat a griddle or cast iron frying pan, and lightly butter it. Drop sweet potato batter by tablespoons onto surface and flatten slightly with the back of a spoon. Cook until golden; then turn and cook until other side is also golden. Transfer to paper towels. Arrange pancakes on a plate and garnish each with a small dollop of cranberry relish. Makes about 20.
