Family Meals: Quick Wraps
When you and the rest of the clan are bored with the same old sandwich for lunch, surprise everyone with these simple and tasty wraps that pack a punch.
Each recipe starts with a lavash or large tortilla for the "wrapper" and after rolled, can be eaten either whole or can be sliced up for snacks or light meals.
For the most part, I prefer alternate spreads such as hummus or mashed avocado to mayonnaise in my wraps and for those on "carb conscious" diets, Trader Joe's Low Carb tortillas make the ideal wrappers.
Veggie Roll Up
Spread a generous coat of hummus on wrapper and top with swiss cheese, sliced cucumbers, shredded carrots, avocado and sprouts.
TurkeyJack
Roughly mash an avocado and spread generously on wrapper. Top with sliced turkey breast, jack cheese and firm tomato slices.
Roast Beef and Asparagus
Boil or steam thin asparagus spears until bright green in color (less than 5 minutes). Spread a light coat of horseradish spread on wrapper and top with sliced roast beef.
Place 3 asparagus spears on edge of wrapper and roll.
Asian Barbeque Chicken
Spread 1 2 tablespoons of your favorite barbeque sauce on wrapper. Slice a grilled chicken breast into 1½ inch pieces and place 4 5 pieces on sauce. Top with sliced scallions and bean sprouts.
These wraps can also make filling dinners with a pasta salad or vegetable dish on the side.

My favorite is a turkey wrap with hummus, sprouts and avocado on a multi-grain tortilla. Or of course a breakfast tortilla with scrambled eggs, reduced-fat cheese and a slice of turkey bacon. Delish. Thanks for the ideas!
